Apple & Courgette muffins are the perfect summer breakfast/snack – makes lots in just a few minutes of oven time! You can batch cook for the whole week.
These muffins are delicious eaten hot or cold, topped with a generous dollop of 0% fat fruit yogurt!
Also perfect for little hands, they are easy to make, healthy, gluten free and the perfect sweet treat.
Filling and satisfying at only 60 calories each (3 syns), these muffins are an absolute lifesaver if you are watching the calories, and cleverly include some of your 5 a day too 😀
Zucchini or Courgette or Squash
Zucchini or courgette, has become one of THE most versatile ingredients to cook with over the last few years!
With the rising popularity of Zoodles (courgette or zucchini noodles) as a low carb alternative to pasta, zucchini caught peoples attention.
Chefs and food bloggers were inspired to experiment with and create amazing dishes using the humble courgette.
So many fantastic recipes appeared on the scene. Not only the many types of low carb ‘pasta’ dishes, there was zucchini Pizza, courgette ‘Chips’ (or Crisps) to snack on and they even replaced potato wedges with oven baked zucchini ‘Wedges’!
The reason it is so versatile is that it marries so well with lots of other flavours and doesn’t overpower a dish with it’s own smell, taste or texture.
Why Apple & Zucchini Muffins ?
Even though zucchini is a ‘new’ ingredient for many, it has traditionally been used to lighten baked goods like bread and cakes since waaaay back!
Fruit is usually the first choice when making bread, cakes or muffins but as cooked fruit is quite high in sugars and carbohydrates, I wanted to use ingredients that added to the recipe without adding too much to the calories or the fat.
So, combined with oats and a little grated apple, zucchini was the perfect choice! This unusual combination made delicious soft, moist & really filling muffins.

These naturally sweet muffins are delicious for breakfast on the go, or warmed up with a little yogurt & fruit and perfect with an afternoon cuppa.
I cannot tell you how many times these have saved me from a giant ‘snack attack’. Just having these in the fridge and being able to enjoy them hot or cold has been amazing.
At only 60 calories (or 3 syns) a muffin, enjoy them guilt free when you need a sweet treat anytime of the day!
I usually make 5 good sized muffins with these quantities, and this is easily doubled, tripled ….!
60 Calorie Apple & Courgette Muffin - Fast & Filling Breakfast or Snack

No flour, oil, butter, sugar and no hard to find or strange ingredients either. These muffins are Gluten free, low fat and naturally sweetened!
- Approx 100g light skinned zucchini, courgette or squash
- Approx 150-160g apple* (approx 1 medium apple core removed) (approx 4 syns)
- 80g oats* (approx 10 syns)
- 2 eggs
- 1 tub 0% fat fruit yoghurt of your choice (approx 150-200g tub)
- 1 tsp ground cinnamon
- 1/2 tsp baking powder ( 0.5 syns)
- 1/2 - 1 tbsp ground Stevia (optional)
- Preheat your oven to 180 °C or 350 °F
- Grate the zucchini & apple on the large side of a box grater or food processor.
- Put all the ingredients into a large bowl and mix well.
- Fill your ramekins or muffin cases with the mix.
- This filled 5 average size ramekins.
- Place ramekins or muffin cases on a tray and bake in the oven for about 20 minutes, until browned on the top and firm to the touch.
Enjoy warm with 0% fat fruit yogurt, custard, honey or just perfect on their own.
These will keep perfectly for up to 4 days, so enough for 5 days worth of muffins

These muffins are great cold from the fridge, or warm with yoghurt.
They are also delicious at room temperature so are perfect for a packed lunch, for work, a picnic or to take to the beach!
Cheap & cheerful with only a few ingredients, makes these a great way to enjoy healthy food whether you are a student minding your pennies, or just wanting an easy way to eat well on a budget.
