As a vegetarian, Kebabs have not been a food I have actually missed.  I really do miss the kebab shop trimmings though!

I find that with most ‘dinners’ it’s generally the trimmings I miss.  For example, I don’t miss fried chicken, I miss creamy mashed potatoes, gravy or beans and biscuits!  I don’t miss the actual ‘roast’, I miss stuffing, Yorkshire puddings, gravy & sprouts.  So I try to recreate the flavours I miss, as best as I can recall.

Takeaway flavours are the hardest for me to recreate as low fat meals.  How can I possibly measure up to deep fat fryers, batter (fish & chips), creamy sauces etc lol.  But the kebab shop wasn’t too bad.

Firstly we needed a spicy yoghurt sauce and a nice fresh salad doused with the obligatory lemon juice. A big helping of rice instead of the white Monster-sized pitta bread, and some juicy oregano flavoured mushrooms, peppers etc.  And of course, some jarred chili peppers on the side  😀

Ingredients
Spicy Yoghurt Sauce

Instructions
  1. First of all, get your rice on. Once it has started to simmer start chopping and slicing all the vegetables you are using.
  2. Add all the chopped vegetables to a small pot of boiling salted water for a couple of minutes. You want them half cooked, so not too soft. Drain them as soon as they are done.
  3. Slice up your Iceberg lettuce, shred your cabbage and carrots (or use pre shredded), you can also use bagged salad too, add some cucumbers, radishes etc. Then squeeze over one of the lemon halves.

  4. Spray a frying pan with olive oil spray, and add the drained half cooked vegetables to the pan. Fry gently to soften and colour them without letting them burn or char. Par boiling should help to keep your mushrooms plump and juicy when you're cooking in a hurry!
  5. Check for salt, as they may not need any more. Then add salt (if needed), pepper and oregano to the cooked vegetables, saute for another minute or so to warm up the herbs, then squeeze over the other half of the lemon or to taste. Serve over the rice.

Recipe Notes

Plate up some white rice,  and top with your herbed mixed vegetables.  Add a fresh crunchy salad including lots of grated cabbage & carrot and some iceberg lettuce etc. Finally dollop on some spicy yoghurt sauce, add a few chilies on the side and you are done!

And there is not a single syn in sight! 😀

The jar of peppers in the photo is a staple in our house! I love them, and eat them with everything! They were probably the inspiration for this meal.

All my meal ideas include at least one third of salad/vegetables and/or fruit with it, (this is the way we at Slimming World eat less without going hungry).

You can always serve a nice big salad separately if you are feeding a crowd, and let everyone help themselves to more spicy yoghurt sauce and peppers too.

Cheap, cheerful and ready in 15 minutes!!  Less time than it would take to go for a take out!
