Portobello Mushroom Cheeseburgers
Celebrating National Cheeseburger Day on September 18th was something of a challenge for a vegetarian – I’m lying actually! It was so much fun!!
I loved the challenge, and I must say that I got carried away and made not one, but TWO great ‘Cheeseburger’ meals!
First off, I wanted ‘mince’ not beans or pulses so I made a batch of ‘burger mince’ using Vegan mince from Tesco. You can find the recipe for the mince on the post for the Cheeseburger Wraps.
Then came the difficult choice bread or no bread? So we had both.
I made the Cheeseburger Wraps for the boys, and made something rather special just for me 🙂
I had some gorgeous large Portobello mushrooms in the fridge, so decided to grill (broil) & then fill them with all my favourite burger toppings. Ta daaa! Portobello Mushroom Cheeseburgers.
Filled with Mince, lettuce, cheese slices, ketchup & mustard, gherkins and sliced onions mmmmm!
Pop the filled mushrooms under the grill again for a couple of minutes, to melt the cheese.
Perfect for an EESP day on Slimming World, and for those of us trying to cut back on the carbs. I promise you, you won’t miss the bread with this recipe.
I’ve also tried wrapping the filling in crisp lettuce leaves, using both Kos and Iceberg varieties, with different toppings and condiments! Lovely with some homemade ‘crisps’ on the side!
For Vegans, either omit the cheese or use Vegan Cheese. I used slices of Gouda 🙂
To make Crispy Fries just follow this easy recipe!
Preheat your oven to Max (mine goes to 250 degrees C)
1 large sweet potato peeled, washed & thinly sliced into long chips
1 large white potato peeled, washed & thinly sliced into long chips
olive oil spray
salt & pepper
Rinse and shake off excess water, then wrap in kitchen paper and microwave until soft – about 10-15 minutes.
Note : turn the ‘packet’ at 5 minutes and check if done at 10 mins, 11 mins, 12 mins etc
Spread the chips onto a baking tray and spray all over with oil, season with salt and pepper.
Bake for approx 10 – 15 minutes turning half way through.
Microwaving makes for a drier potato, which gets crispier, faster. But, you can parboil the chips in salted water if you prefer, until just cooked. Drain and spread onto a baking tray. Let the chips dry for a little then spray with oil and season. Bake as above.
Easy, healthy homemade Ketchup!
2 heaped tablespoons of tomato puree
a good pinch of dry mustard powder
2 good splashes of balsamic vinegar or soy sauce to taste
1 heaped tablespoon of stevia
Salt & pepper
50- 100 ml of cold water (add a little at a time, stir well and keep tasting)
We prefer this ketchup to the store bought, and with no sugar you can enjoy lots of it, guilt free 🙂
A fabulous meal, easy to prepare and looks a little bit special!! And of course, so easy to make Vegan.
All my meal ideas include at least one third of salad/vegetables and/or fruit with it, (this is the way we at Slimming World eat less without going hungry).
N.B. Any item with a * is a Healthy Extra* on the Slimming World plan, so these must be weighed or measured and not exceeded, if you want to maximise your weight loss. Eating at least one third of vegetables (superfree food) at each and every meal is also key to this plan.
