Secret Ingredient 0% Fat Creamy Coleslaw – Carb Free, Sugar Free, Fat Free

Creamy fat free coleslaw made with a secret ingredient.  An easy and quick way to add a healthy serving of vegetables to your meal, and a good way to convince children to eat their ‘greens’.

It’s no secret that I try to add at least a third of my plate as vegetables – be it as a salad, cooked vegetables or simply some cucumber slices.  Trying to find interesting ways to eat my veg, is one of my ongoing goals.  Trying to get the rest of the family to eat their veg, is my mission in life! lol

Now coleslaw is not the first thing that comes to mind when thinking of low fat side dishes.  So when we fancied having a Burger night, I thought Wedges, BBQ Beans and Coleslaw!  It’s bad enough that we’re vegetarians, but we’re also part of the Slimming World family, so you’d think we would have no choices!

Wrong!  Please take a minute to pop over and check out my awesome Tofu Steak Burger and Wedges because the third item that made up that evening’s meal, was this fat free Coleslaw!

 

Using 0% Yoghurt is a no-brainer, and you could also use fat free fromage frais, but with trial and error I have my very own perfect coleslaw recipe.  I hope you’ll like it just as much as we did.

I also use this as a sandwich filling.  Makes a change from cucumber, lettuce & tomato!

I sometimes add mustard seeds, lemon juice or cider vinegar. These are all free ingredients, whereas some people add some light mayo in with the yoghurt, but you have to syn that.
You can make this and leave it in the fridge for hours before, or if you’re like me, make it up as soon as you remember dinner and let it sit for just a little while you’re making the other bits!

Instructions
  1. Either grate a medium sized carrot and a wedge of cabbage per person, or buy prepacked shredded mix ( I cheat, and buy ready grated), into a large bowl.
  2. Add sliced red onion, as much as you fancy.
  3. Grate an apple and add to the veg, for added sweetness. You'll be surprised at how good it is.

  4. Mix 0% fat yoghurt and a tiny bit of dry mustard powder and mix into the coleslaw vegetables, until well covered and creamy.
  5. You can either cover and refrigerate until you're ready to eat, or you can eat it straight away - just let it stand for 5-10 minutes. Add some salt & pepper if you like.
